Baking Raspberry and Lemon Madeleines with Rachel Khoo

We love Rachel Khoo's recipes, even this one which uses full fat milk. The fact is it looks great and the madeleines are wonderful. 200 grammes of butter, 130g caster sugar, 3 eggs, 200 grammes plain flour, baking powder, lemon zest, honey, 60 ml full fat milk and a raspberry topping. Hand whisked to combat "bingo wings". Baked in in shell shaped moulds.

Rachel Khoo makes a savoury cake with goat's cheese, pistachios & prunes

French style cakes can be more savoury. Rachel Khoo shows how to make this cake using goats cheese, prunes and pistachios, 100ml of olive, 100ml milk, 50 grammes of yoghurt to keep the cake moist.

Fold it in to keep the cake soft. Cook at 180 degrees for 30-40 minutes.

Nigella's Lemon Polenta Cake video with Martha Stewart

In this video Nigella Lawson appeared on the Martha Stewart show and made a tasty lemon polenta cake, and explains how to make the gluten-free recipe using almond flour, fine cornmeal, baking powder, zested lemons and lemon juice. The cake should be ready in 40 minutes.

Some things to bear in mind about using polenta:

  • it provides only 70 calories per 100 grams (g) cooked serving
  • one serving contains 16 grams of carbohydrates, including 1.5 grams of dietary fibre

Obviously adding flavourings will drive up the fat and calories!

170g unsalted butter
170g brown sugar
1 large ripe banana
4 eggs
6 heaped table spoons sour cream
1 table spoons vanilla extract.
2 heaped table spoons poppy seeds pinch salt
340g plain flour
2 heaped teaspoons baking powder
6 table spoons white sugar a lemon + icing sugar

160C/325F/Gas Mark 3 for 45minutes

I was looking for a recipe for chocolate cake and found one by Stephanie Jaworski of Joyofbaking.com  http://www.joyofbaking.com/cakes/Simp...  demonstrates how to make a Simple Chocolate cake. This is my "go to" Chocolate Cake recipe. I make it for family dinners, birthdays, and everything in between. What I really like the combination of two types of chocolate. The use of unsweetened cocoa powder in the recipe is is very appealing, being used in the chocolate cake and a dark chocolate (semi sweet or bittersweet) is used in the frosting.
