Easter Simnel Cake
Paul Hollywood demonstrates how to make an Easter Simnel cake. This can be eaten any time during Lent, Mothering Sunday and at Easter. It’s fruitcake with marzipan and some special Easter flavours including ground cinnamon. One of the only cakes to have a baked layer, the marzipan on top is toasted too. According to Wikipedia: “Conventionally eleven, or occasionally twelve, marzipan balls are used to decorate the cake, with a story that the balls represent the twelve apostles.” In this version though he uses mini Easter eggs.
